Fried greens – Should not be confused with Tsigarides (Fried Pork). Recipe by Skarmoutsos; watch video (up to 03:00) here (In Greek)
Wild Greens (e.g. artichoke, endives, spinach, radikia, chicory)
2 Tomatoes
Fresh Dill
1 Onion
Ladotyri (olive oil cheese)
Olive Oil
Cut the tomatoes and the onion in thick pieces
Keep the leaves from the greens and wash them well. Trash away the black and dry leaves
In a pan we add plenty of olive oil and sauté the onion
Add the greens. Do it at once, to avoid over-burn the greens
Add salt & pepper.
Add the dill and the tomatoes.
When boiled, add the cheese, reduce heat, cover and wait 7 more minitues.
